Fondant 101

Breakdown: Fondant icing is made from a mix of sugar, water, and gelatin (or sometimes marshmallows) to create a dough-like consistency. Some versions include glycerin for extra elasticity, making it easier to roll and shape. The result? A smooth, slightly chewy coating that can be sculpted into intricate designs, embossed with patterns, or painted with edible paints.

Types: Fondant can be poured, rolled, or sculpted depending on what you’d like your wedding cake to look like. Rolled fondant is the most common type. With this type of fondant, fondant icing is rolled into a thin layer using a rolling pin and used to cover your whole cake giving it a smooth, flawless finish. Poured fondant is commonly used for smaller desserts or drizzles.  Sculpted fondant is more dense, allowing it to be shaped into sugar flowers or other decorative accents.

Taste: Fondant gets a bad rap for how it tastes, and while it’s not buttercream, it can still be a delicious option for your wedding cake. Your baker may even be able to customize it  to fit your tastes: vanilla, chocolate, almond or citrus flavors can enhance your cake while still getting that flawless fondant finish.
